We place 350 g of all‑purpose flour in a bowl.

نضع 350 جرام دقيق في وعاء.

We add 14 g of honey (or sugar), 7 g salt, and 7 g instant yeast.

نضيف 14 ج العسل (أو السكر)، 7 ج ملح، و7 ج خميرة فورية.

نضيف 25 ج زيت و75 ج زبادي.

We gradually add 150 g warm water and knead until the dough is soft and smooth.

نضيف 150 ج ماء دافئ تدريجيًّا ونعجن حتى نحصل على عجين طريّ وناعم.

We cover the dough and let it rest for 15–20 minutes.

نغطّي العجين ونتركه يرتاح لمدة 15–20 دقيقة.

نشكل العجين إلى 8 كرات متساوية الحجم.

We roll each ball with a rolling pin into a thin disc.

نفرد كل كرة بمدلك عجين (شوبك) إلى قرص رقيق.

We heat a cast‑iron skillet over medium heat

نسخّن مقلاة ثقيلة على نار متوسطة.

We cook each disc 1–2 minutes per side until golden brown.

نطهو الأقراص في المقلاة 1–2 دقيقة لكل جانب حتى تتحمر.

Prepare the filling by whisking together heavy cream, milk, sugar, egg yolks, and vanilla until smooth.

نُحضّر الحشوة بخلط كريمة الخفق مع الحليب والسكر وصفار البيض والفانيليا حتى تتجانس.

Roll out the puff pastry on a lightly floured surface.

نفرد عجينة البف باستري على سطح مرشوش بقليل من الطحين.

Cut the dough into small squares that fit into the cupcake pan.

نقطّع العجينة إلى مربعات صغيرة تناسب قوالب الكب كيك.

Grease a cupcake pan with oil or butter, then line each cup with a pastry square.

ندهن قوالب الكب كيك بالزيت أو الزبدة ثم نرصّ قطع العجينة فيها.

Chill the pan in the freezer for 10 minutes to firm up the pastry.

نبرّد القوالب في الفريزر لمدة 10 دقائق حتى تتماسك العجينة.

Pour the filling into each pastry cup, filling nearly to the top.

نصب خليط الحشوة في وسط كل قالب حتى يمتلئ تقريبًا.

Bake in a preheated oven at 200 °C (390 °F) for 12 minutes, until the edges are golden and the tops are lightly browned.

نخبز في فرن مسخّن مسبقًا على 200°م لمدة 12 دقيقة أو حتى تَتحمّر الحواف وتسمّر الوجه.

We stir the ingredients until they release their delightful aroma.

نقلب المكونات حتى تفرز رائحتها الزكية.

We let the mixture cool, then grind it in a food processor until smooth.

نترك المكونات لتبرد ثم نطحنها باستخدام محضرة الطعام حتى نحصل على خليط ناعم.

We soak the pre‑soaked fava beans for 12–24 hours, then drain them.

ننقع الفول مسبقًا من ١٢ إلى ٢٤ ساعة ثم نصفيه.

We place the fava in a pressure cooker with salt, citric salt, baking soda, paprika, turmeric, minced garlic, and lemon slices, then cover with water.

نضع الفول في قدر الضغط مع الملح، ملح الليمون، بيكنج صودا، البابريكا، الكركم، الثوم المهروس، وشرائح الليمون، ونغمره بالماء.

نطهيه في قدر الضغط الكهربائي لمدة ٣٠ دقيقة.

We add the split fava beans, green lentils, and sauce, then pressure‑cook for another 15 minutes.

نضيف الفول المدشوش والعدس الأخضر والصلصة ونواصل الطهي تحت الضغط لمدة ١٥ دقيقة إضافية.

We release the pressure, then stir in cumin, salt, lemon juice, and olive oil.

نرفع الضغط، ثم نضيف الكمون، الملح، عصير الليمون وزيت الزيتون ونقلب جيدًا.

We serve the fava hot, drizzled with extra olive oil and a squeeze of lemon.

نقدم الفول مدمسًا ساخنًا مع رشة زيت زيتون وعصرة ليمون للتقديم.

نضع الطحين المنخول، السكر، بودرة الشوكولاتة، البيكنج باودر، البيكنج الصودا، ورشة الملح في وعاء

We add the mayonnaise, water, and vanilla extract to the dry ingredients.

نضيف المايونيز، الماء، وخلاصة الفانيليا إلى المكونات الجافة.

We mix thoroughly until we obtain a smooth, homogeneous batter.

نخلط المكونات جيداً حتى نحصل على خليط متجانس.

We pour the batter into a greased or parchment‑lined baking pan.

نسكب الخليط في صينية خبز مدهونة بالزيت أو مبطنة بورق الزبدة.

We bake the cake in a preheated oven at 160 °C (320 °F) for 1 hour, or until fully set.

نخبز الكعكة في فرن مسخن مسبقاً على درجة حرارة 160°م لمدة ساعة أو حتى تنضج تماماً.

Once the cake has cooled, we spread ganache or preferred topping over it, then serve.

بعد أن تبرد الكعكة، نضع الجناش أو التغطية المفضلة فوقها ثم نقدمها.

Dip the croissants in a mixture of grains as desired.

نغمس الكرواسون في مزيج من الحبوب حسب الرغبة.

Gently press the croissants using a silicone sheet or baking paper.

We bake in a preheated oven at 180 °C until golden brown and crisp.

نخلط السكر الناعم، بياض البيض، ونكهة اللوز في الخلاط الكهربائي حتى تتجانس.

We gradually add the almond powder, mixing until a thick, glossy batter forms.

نضيف لوز البودرة تدريجياً مع الخلط حتى نحصل على عجينة كثيفة ولامعة.

We transfer the batter into a piping bag and pipe 3 cm rounds onto a silicone mat

ننقل الخليط إلى كيس حلواني، ونرسم دوائر بقطر 3 سم على ورق سيليكون.

We lightly mist each shell with water, then dust the tops with powdered sugar.

نرش رذاذاً خفيفاً من الماء ثم نغمس السطح في السكر البودرة.

We let the macarons rest for 30 minutes until a skin forms.

نترك الماكرون يرتاح 30 دقيقة.

We bake in a preheated oven at 150 °C for 12–15 minutes.

نخبز في فرن مسخن مسبقاً على 150°م لمدة 12–15 دقيقة.

Combine sugar, powdered milk, and water in a blender and blend until the sugar dissolves completely.

نضع السكر، الحليب البودرة، والماء في الخلاط ونخلط حتى يذوب السكر تمامًا.

Add eggs, vanilla, and cream to the mixture and blend again until smooth and creamy.

نضيف البيض والفانيليا والكريمة إلى الخليط ونخلط مرة أخرى حتى يتحول المزيج إلى سائل كريمي ناعم.

In a saucepan, heat a little water with sugar over medium heat until it caramelizes to a light amber color.

في قدر على النار، نضع القليل من الماء مع السكر ونتركه حتى يتكرمل ويصبح لونه عنبريًا فاتحًا.

Divide the caramel into ramekins, coating the bottom and sides evenly.

نوزع الكراميل الناتج في قوالب ونحرص على طلاء القاع والجوانب جيدًا.

Pour the custard mixture over the caramel in each ramekin, filling them almost to the top.

نصب خليط الكريمة والبيض فوق الكراميل في القوالب حتى يمتلئ كل قالب.

Place the ramekins in a baking dish filled with hot water (water bath) and bake in a preheated oven at 160 °C for 45–50 minutes.

نضع القوالب في صينية كبيرة بها ماء ساخن (حمام مائي)، ثم ندخلها فرنًا مسخنًا مسبقًا على 160°م لمدة 45–50 دقيقة.

Whisk the egg whites with vanilla and a pinch of salt until frothy.

نخفق بياض البيض مع الفانيليا ورشة الملح حتى يبدأ الخليط في تكوين رغوة.

Gradually add the sugar while whisking until stiff, glossy peaks form (meringue).

نضيف السكر تدريجيًّا مع الاستمرار في الخفق حتى نحصل على مرينغ ثابت وقمم متماسكة.

In a separate bowl, beat the egg yolks until uniform in color.

نخفق صفار البيض في وعاء منفصل حتى يتجانس لونه.

Gently fold the meringue into the yolks in three additions, preserving as much air as possible.

نطيّ مرينغ البيض في صفار البيض على ثلاث دفعات، مع التقليب بلطف للحفاظ على الهواء.

Sift the flour over the mixture, then fold gently until just combined.

ننخل الطحين فوق الخليط مرة واحدة، ثم نطيّه برفق حتى يمتزج دون إخراج الهواء.

Transfer batter to a piping bag and pipe uniform lines onto a parchment‑lined tray; dust with sugar.

نملأ كيس حلواني بالعجينة ونرسم خطوطًا متساوية على صينية مبطنة بورق زبدة، ثم ننثر قليلًا من السكر.

Bake in a preheated oven at 180 °C (356 °F) for 8–10 minutes, until the edges are lightly golden.

نخبز في فرن مسخن مسبقًا على 180°م لمدة 8–10 دقائق أو حتى تصبح الحواف ذهبية ناعمة.

مربي البرتقال بيتي ملهاش حل لفطار العيد🍊

Orange

Orange jelly

Orange food coloring

Place the oranges in a pot over heat. Add boiling water and simmer for 20 minutes.

نضع البرتقال في قدر على النار. نضيف الماء المغلي ونتركه يغلي لمدة 20 دقيقة.

Cut the oranges in half and puree them in a food processor.

نقطع البرتقال إلى نصفين ونهرسه في محضرة الطعام.

Return the mashed orange mixture to the saucepan. Add the sugar and lemon salt, then add the orange food coloring.

نعيد خليط البرتقال المهروس إلى القدر.  نضيف السكر وملح الليمون ثم  نضيف لون الطعام البرتقالي.

Cook the mixture, stirring, until it thickens.

نطهي المزيج مع التحريك حتى يثخن.

Stir in the jelly powder and cook for 2 additional minutes.

نضيف مسحوق الجيلي ونطهي لمدة دقيقتين إضافيتين.

Pour the jam into sterilized jars and seal tightly.

نسكب المربى في برطمانات معقمة ونغلقها بإحكام.

الجزء الثاني لاسرار خبز الاكلير او الباتاشو

Dough

We use all-purpose flour with a protein content not exceeding 11.5% or special pastry flour.

نستخدم طحين متعدد الاستخدامات نسبة البروتين به لا تتعدي 11 و نصف او طحين خاص بالبيستري.

Before putting it in the oven, sprinkle a little water and powdered sugar on the surface of the dough.

قبل ادخاله الفرن نرش علي سطح العجين القليل من الماء و السكر البودرة.

اسرار خبز الاكلير

اسرار خبز الاكلير او عجينه الباتاشو

Bake the dough at 180°C for 20 minutes, then reduce the temperature to 135°C with the oven door ajar for 30 minutes.

نسوي العجين علي درجة حرارة 180 لمدة عشرين دقيقة ثم نخفض درجة الحرارة ل 165 مع مواربة باب الفرن لمدة 30 دقيقة.

ازاي تزبط عجينه الخبز😍

When kneading, add the fatty substance at the end of the kneading process until we get the perfect consistency.

عند العجن نضيف المادة الدهنية في اخر العجن حتي نحصل علي قوام مثالي.
