Prepare a baking tray lined with parchment paper. Cut the red pepper (and green pepper, if available) and the head of garlic.

نحضر صينية ونبطّنها بورق زبدة. ثم نقطع الفلفل الأحمر (وأيضًا الفلفل الأخضر إن وُجد) ورأس الثوم.

Sprinkle the cut peppers and garlic with salt, black pepper, and olive oil.

نرش الفلفل المقطّع والثوم بالملح، الفلفل الأسود، وزيت الزيتون.

Place the tray in a preheated oven at 200°C for 30 minutes so that the vegetables roast and develop a smoky flavor.

ندخل الصينية إلى فرن مسخّن مسبقًا على حرارة 200°C لمدة نصف ساعة حتى تتحمص المكونات وتكتسب نكهة مشوية.

Remove the vegetables from the oven and transfer them to a plate, then cover them for 30 minutes to help loosen the skin, as shown.

نخرج المكونات من الفرن ونضعها في طبق، ثم نغطيها لمدة نصف ساعة لتسهيل فصل القشرة عنها.

Place the roasted peppers and garlic with the cottage cheese in a food processor (or bowl), then add a pinch of salt and 1 full teaspoon of cumin; add jalapeño if desired.

نضع المكونات المشوية (الفلفل والثوم) مع جبنة القريش في الكبة (أو في وعاء)، ونضيف رشة ملح وملعقة صغيرة مليئة من الكمون، ويمكن إضافة الهالبينو إذا رغبتم.

Blend or mix the ingredients until you obtain a smooth dip.

نطحن المكونات معاً حتى نحصل على تغميسة متجانسة.

Serve the dip with toasted bread or other appetizers as desired.

نقدّم التغميسة مع الخبز المحمص أو مع مقبلات أخرى حسب الرغبة.

In a pan, caramelize 2 tablespoons of sugar with 2 tablespoons of water.

في مقلاة، نكرمل ملعقتين كبيرتين من  السكر مع ملعقتين كبيرتين من الماء.

Add the boiling water (for each cup of Egyptian rice, add 1¼ cups of water).

نضيف الماء المغلي (لكل كوب أرز مصري كوب وربع ماء).

Add the cinnamon, bouillon powder, and black honey, then let it boil.

نضيف القرفة، مرقة بودر، وعسل أسود ونتركه يغلي.

In another pan, add the ghee and stir the rice well

في مقلاة أخرى، نضيف السمنة ثم نضيف الأرز ونقلبه جيداً .

Pour the caramelized sugar mixture over the rice.

نسكب خليط السكر فوق الأرز.

Cover the pan, reduce the heat, and let the rice cook

نغطي المقلاة ونخفف النار ونترك الأرز حتى ينضج.

In a pan over heat, add the ghee, then fry the raisins and almonds until they turn golden.

في مقلاة على النار نضع السمنة ثم نقلي الزبيب واللوز حتى يأخذوا اللون الذهبي

Add the fried raisins and almonds to the rice.

نضيف الزبيب واللوز المقلي للأرز.

نقوم بوضع اللحم المفروم في وعاء.

We strain the chopped onion from its water well.

نقوم بتصفية البصل المفروم من مائه جيدا

We add the salt, black pepper, mixed spices, baking powder, and chopped onion to the ground meat.

نضيف الملح والفلفل الأسود والبهار المشكل والبيكنج باودر والبصل المفروم إلي اللحمة.

Add chopped parsley and knead the ingredients well.

نضيف البقدونس المفروم ونقوم بعجن المكونات جيداً.

Shape the kebabs into skewers using wooden sticks.

نشكل الكفتة على شكل أسياخ باستخدام عصا خشبية.

نقوم بتسخين الزيت في مقلاة.

Place the kebabs in the pan and leave them until they brown on one side.

نضع الكفتة في المقلاة ونتركها حتى تأخذ لوناً من  الجهة الأولى .

Flip the kebabs to the other side and reduce the heat.

نقلب الكفتة على الجهة الأخرى و نهديء النار.

Brush the kebabs with a sauce made of onion juice, pepper molasses, and oil.

ندهن الكفتة بصلصة مكونة من ماء البصل ودبس الفليفلة والزيت.

We place the lit charcoal in aluminum foil and add a drop of oil to it.

نضع الفحم المشتعل في ورقة قصدير ثم نضيف إليه نقطة من الزيت .

We place the aluminum foil with the kebabs as shown in the video.

نضع ورقة القصدير  مع الكفتة كما موضح بالفيديو

Note: The ground meat should contain 10% fat.

We place ½ cup of water and 1 cup of sugar in a pot over heat and stir until the sugar dissolves.

نضع نصف كوب من الماء وكوباً من السكر في قدر على النار ونقلب حتى يذوب السكر تماماً.

We reduce the heat and add the juice of ½ lemon, then continue stirring for 1 minute.

نخفض النار ونضيف عصير نصف ليمونة، ثم نستمر في التقليب لدقيقة.

Turn off the heat and add a drop of orange blossom water, rose water, vanilla or saffron, as desired.

نطفئ النار ونضيف نقطة من ماء الزهر أو ماء الورد أو الفانيليا أو الزعفران حسب الرغبة.

We stir the syrup well and let it cool before use.

نقلب الخليط جيداً ثم نتركه ليبرد قبل الاستخدام.

We gradually add 1 tbsp of flour while whisking constantly.

We add 1 tbsp of milk powder and 1 cube of butter, then season with salt, black pepper, and nutmeg.

نضيف 1 ملعقة كبيرة من لبن البودرة و1 مكعب زبدة، ثم نتبّل بالملح، الفلفل الأسود، وجوزة الطيب.

We stir the ingredients well until smooth and fully combined.

نقلب المكونات جيدًا حتى تمتزج وتصبح ناعمة.

We let the pan sit over medium heat until the mixture comes to a boil

نترك القدر على نار متوسطة حتى يبدأ المزيج بالغليان.

After boiling, we reduce the heat and gently simmer for one minute.

بعد الغليان، نخفض الحرارة ونترك البشاميل يغلي بلطف لمدة دقيقة واحدة.

We pour the hot béchamel over stuffed potato balls or any preferred dish.

نخلط ربع كوب قهوة سريعة الذوبان، ربع كوب سكر، وربع كوب ماء في وعاء ونخفق كهربائيًا حتى يثخن الخليط.

We transfer the mixture to a sealed container and freeze to set the foam.

ننقل الخليط إلى وعاء محكم الإغلاق ونضعه في الفريزر لتثبيت الفوم.

We fill a glass with ice, then pour in 1 cup cold milk.

نملأ كوبًا بالثلج، ثم نضيف كوب الحليب البارد.

We spoon a heaping tablespoon of foam over the milk and gently stir before serving.

We blend until the mixture is smooth and creamy.

Place the chicken breasts in a sealed Ziploc bag.

نضع صدور الدجاج في كيس بلاستيكي محكم الإغلاق.

Add paprika, garlic powder, onion powder, Cajun seasoning, thyme (or oregano/Italian), salt, pepper, and oil to the bag.

نضيف البابريكا، بودرة الثوم، بودرة البصل، بهار الكايجن، الزعتر (أو الأوريجانو/الإيطالي)، الملح، الفلفل، وزيت الزيتون إلى الكيس.

Seal the bag and shake well to coat all the chicken breasts with the seasoning.

نغلق الكيس جيداً ثم نقلبه حتى تتغطى صدور الدجاج بالتتبيلة بالكامل.

Refrigerate the bag for 2 days to allow flavors to develop.

نضع الكيس في الثلاجة لمدة يومين ليتشرب الدجاج النكهات

Preheat the non-stick frying pan over medium heat.

نسخن المقلاة غير اللاصقة على نار متوسطة.

Cook the chicken breasts 3 minutes per side, or until fully cooked.

نطهو صدور الدجاج على كل جانب لمدة ٣ دقائق أو حتى ينضج تماماً.
