Heat olive oil in a pot, then add the chopped onion and sauté until softened.

نقوم بوضع زيت الزيتون في قدر على النار، ثم نضيف البصل المفروم ونقلّبه حتى يذبل.

نقوم بتقطيع صدور الدجاج إلي مكعبات صغيرة

نضيف الدجاج المقطع إلى القدر.

Sauté the chicken with the onion and spices (black pepper, turmeric, and cardamom) until well combined.

نقلّب الدجاج مع البصل والبهارات (الفلفل الأسود، الكركم، الهيل) حتى تتداخل النكهات.

Add the rinsed freekeh and the water or broth, and stir well.

نضيف الفريكة المغسولة والماء أو المرق، ونحرّك جيداً.

Cover the pot and let it simmer on low heat for about 30 minutes until the freekeh is cooked

نغطي القدر ونتركه على نار هادئة لمدة نصف ساعة حتى تنضج الفريكة.

In a separate pan, heat a little oil over medium heat.

في مقلاة على نار متوسطة، نسخّن القليل من الزيت.

Add the chopped fresh mushrooms with a pinch of salt and black pepper

نضيف الفطر المقطع مع رشة ملح وفلفل أسود

نقلّبه حتى ينضج ويتحمّر قليلاً.

Add the sautéed mushrooms to the freekeh and mix gently.

نضيف الفطر المطهو إلى قدر الفريكة ونقلبه بلطف.

Serve the freekeh hot, topped with grated parmesan cheese, cooking cream

نقدّم الفريكة ساخنة، ونزينها بجبنة البارميزان، كريمة الطبخ

Add pomegranate seeds, toasted pine nuts or almonds, and fried onions as desired.

نضيف الرمان، الصنوبر أو اللوز، والبصل المقلي حسب الرغبة.

We wash the lamb bones thoroughly with water to remove any impurities.

We sauté the bones in a large pot over heat until lightly browned to enhance the flavor.

نقوم بتقليب العظام في قدر كبير على النار حتى تتحمص قليلًا ويظهر منها طعم مميز.

We add boiling water to the pot until the bones are fully covered.

نضيف الماء المغلي إلى القدر حتى يغمر العظام تمامًا.

We skim off any foam (scum) that rises to the surface.

نقوم بإزالة الزفرة التي تطفو على الوجه باستخدام ملعقة.

We add whole spices: bay leaves, cardamom pods, cloves, coriander seeds, black peppercorns, sweet pepper, and cumin seeds.

نضيف البهارات الحب: ورق الغار، الهيل، القرنفل، الكزبرة، الفلفل الأسود، الفلفل الحلو، والكمون.

We add the onion, carrots, and parsley (and celery if available).

نضيف البصل، الجزر، والبقدونس (ويمكن إضافة الكرفس إن توفر).

We let the broth simmer on low heat for 4 to 5 hours with the pot partially covered.

نترك المرق يغلي على نار هادئة لمدة 4 إلى 5 ساعات مع تغطية القدر جزئيًا

We strain the broth using a fine sieve to remove bones and vegetables

نقوم بتصفية المرق من العظام والخضروات باستخدام مصفاة دقيقة.

We pour the broth into plastic cups and allow it to cool completely.

نصب المرق في أكواب بلاستيكية ونتركه ليبرد تمامًا.

Once set, we remove the frozen broth from the cups and store it in an airtight container in the freezer for later use.

بعد أن يتماسك، نخرج المرق من الأكواب البلاستيكية ونضعه في وعاء محكم الإغلاق ونحتفظ به في الفريزر لاستخدامه لاحقًا.

نقدّم الشوربة مزينة بالبصل الأخضر، ومع شرائح التوست الأسمر المحمصة

Toast the sandwich on the grill until the cheese melts and the bread is golden, then cut it into small cubes to serve with the soup.

نحمص الساندويتش في الجريل حتى يذوب الجبن ويتحمّر الخبز، ثم نقطعه إلى مكعبات صغيرة لتقديمه مع الشوربة.

We spread two slices of whole wheat toast with butter and garlic, then place cheddar cheese between them and press the slices together

نقوم بدهن شريحتي توست أسمر بالزبدة والثوم، ثم نحشو بينهما جبنة شيدر ونضع الشريحتين فوق بعض

Simmer the soup gently over low heat for a few minutes.

نسخّن الشوربة على نار هادئة لعدة دقائق.

Return the reserved broccoli florets to the pot.

نُعيد زهرات البروكلي المحفوظة إلى القدر لمزيد من القوام.

Use an immersion blender to blend the soup until smooth.

نستخدم الخلاط اليدوي (الهاند بلندر) لخلط الشوربة حتى تصبح ناعمة.

Set aside a few broccoli florets to add back later for texture.

نحتفظ ببعض زهرات البروكلي جانبًا لنضيفها لاحقًا.

Heat the previously prepared meat or chicken broth

نقوم بتسخين مرق اللحم أو الدجاج المُحضّر مسبقًا.

Add water gradually to reach the desired consistency.

نضيف الماء تدريجيًا للحصول على القوام المطلوب.

نضيف المرق الساخن إلي  المكونات.

Add the spices: cardamom, cumin, coriander, herbs, mixed spices, and black pepper.

نضيف البهارات: الهيل، الكمون، الكزبرة، الأعشاب، البهارات المشكلة، والفلفل الأسود.

Add the chopped broccoli and potato, and mix well.

نضيف البروكلي والبطاطا المقطعة ونحرّك الخليط.

Add the minced garlic and stir until fragrant.

نضيف الثوم المهروس ونقلّب حتى تفوح رائحته.

In a pot, sauté the finely chopped onion with a little olive oil until soft.

نضع البصل المفروم مع القليل من زيت الزيتون في قدر على النار ونقلّبه حتى يذبل.

Chop the sweet potatoes, carrots, squash, peppers, onions, add the garlic, and arrange them on a baking sheet.

We drizzle the vegetables with olive oil and sprinkle paprika, cumin, black pepper, and cardamom.

We roast the vegetables in a preheated oven until golden and tender.

نهرس الخليط باستخدام الخلاط اليدوي حتى نحصل على قوام ناعم.

We add boiling water until we reach the desired consistency.

نضيف الماء المغلي حسب القوام المطلوب.

We stir the soup well and let it simmer for a few minutes.

نحرّك الشوربة جيداً وندعها تغلي لدقائق.

نقوم بإضافة الملح حسب الرغبة

We prepare the optional "tasha" by melting butter in a small pan and adding paprika and dried coriander.

نحضّر الطشة: نذيب الزبدة في مقلاة صغيرة ثم نضيف البابريكا والكزبرة الناشفة ونحرّكها قليلاً.

We pour the tasha into the soup and stir.

نضيف الطشة إلى الشوربة ونحرّك.

We serve the soup in hollowed-out bread or deep bowls.

نقدّم الشوربة في خبز مجوّف أو في طبق عميق.

We can add grated cheese and let it melt.

يمكننا إضافة جبنة مبشورة ونتركها حتى تذوب.

نقوم بإضافة كزبرة مفرومة للتزيين .

نقوم بتسخين الزيت في قدر ونقلّب فيه البصل حتى يذبل.

نضيف الثوم المهروس ونقلب لمدة دقيقة واحدة.

Add the thinly sliced mushrooms and keep stirring.

نضيف شرائح الفطر ونواصل التقليب.

Add the spices (black pepper, dried parsley, coriander, and cardamom) and mix well.

نضيف البهارات (فلفل أسود، بقدونس، كزبرة، هيل) ونقلب المزيج.

Continue stirring until the mushrooms soften and get a nice golden color.

نستمر في التقليب حتى يذبل الفطر ويأخذ لوناً ذهبياً.

نضيف البندورة المجففة إذا كانت متوفرة.

Sprinkle the flour over the mixture and stir until well combined.

نرش الطحين فوق المزيج ونقلب جيداً حتى يختفي الطحين.

Scrape any bits stuck to the bottom of the pot.

نكشط أي مكونات عالقة في قاع القدر.

Pour in the beef or chicken broth and mix well.

نضيف مرقة اللحم أو الدجاج ونقلب جيداً.

Add boiling water and adjust salt to taste.

نضيف الماء المغلي ونضبط الملح حسب الرغبة.

نحتفظ بجزء من الخضار جانباً.

Add more boiling water if needed to reach desired consistency

نضيف كمية إضافية من الماء المغلي إذا لزم الأمر.

Add the labneh and blend the soup using an immersion blender until smooth.

نضيف اللبنة ونستخدم الخلاط اليدوي لمزج المكونات حتى نحصل على قوام ناعم.

Return the reserved vegetables to the pot.

نُعيد الخضار التي احتفظنا بها إلى القدر.

Let the soup simmer for five more minutes, then serve.

نترك الشوربة على النار لمدة خمس دقائق إضافية ثم نقدّمها.
