Prepare the Marinade: In a bowl, we add cumin, black pepper, salt, chicken spices, and vinegar. We gradually add water until the spices dissolve.

Marinate the Chicken: We place the chicken in the marinade and cover it. We let it marinate for 1 hour to 24 hours.

Prepare the Garlic Sauce (Mathouma): In a pan, we mix 3 tablespoons of cornstarch with 1 cup of water. We stir well and then place it over heat until it thickens and becomes transparent. Once cooled, we put it in a food processor with the juice of two lemons and 3 cloves of garlic. We gradually add oil and blend until the mixture is smooth and creamy. We add salt to taste and refrigerate it.

Grill the Chicken: We take the chicken out of the marinade and season it with chicken spices. We skewer the chicken. We place the chicken in a preheated oven, setting the grill to high for 15-30 minutes. Then, we reduce the heat and let it cook for 1.5 to 2 hours, basting it with its own juices during cooking. Serve
