After finishing mixing the cake, add ¼ teaspoon of baking soda to the batter.

بعد الانتهاء من خلط الكيكة، نقوم بإضافة ربع ملعقة صغيرة من كربونات الصوديوم إلى الخليط.

Pour 1 teaspoon of white vinegar directly over the baking soda to create immediate fizzing.

نضيف ملعقة صغيرة من الخل الأبيض مباشرة فوق الكربونات لتحدث فورانًا.

Stir the batter slightly to mix with the fizz.

نخلط ٦ أكواب من الطحين الأبيض مع ملعقة كبيرة من الملح.

Gradually add the warm water to the flour and knead well until a smooth, elastic dough forms (it’s preferable for the dough to be a bit soft).

نضيف ماء دافئ تدريجيًا إلى الطحين ونعجن جيدًا حتى تتكون عجينة ملساء ومطاطية (يُفضل أن تكون قريبة من العجين الرخو).

Add 1/4 cup of olive oil and knead again until the dough is well combined

نضيف ١/٤ كوب من زيت الزيتون ونعجن مرة أخرى حتى تتماسك العجينة بشكل جيد.

Cover the dough and let it rest at room temperature for about 30 minutes to an hour.

نغطي العجينة ونتركها لترتاح في حرارة الغرفة لمدة نصف ساعة إلى ساعة تقريبًا.

To prepare the filling, wash 2 cups of fresh green zaatar and let it dry well

لتحضير الحشوة، نغسل ٢ كوب من الزعتر الأخضر ونتركه ليجف جيدًا.

Mix the zaatar with 1 large finely chopped onion, 2-3 tablespoons of sumac, pepper, and salt to taste.

نخلط الزعتر مع بصلة كبيرة مفرومة ناعم، ٢-٣ ملاعق كبيرة من السماق، وفلفل وملح حسب الرغبة.

Rub the filling well, then add olive oil and adjust the salt and sumac if needed.

نفرك الحشوة جيدًا ونضيف زيت الزيتون ونضبط الملح والسماق حسب الحاجة

Divide the dough into small balls and let them rest for 10 minutes on an oiled tray.

نقطع العجينة إلى كرات صغيرة ونتركها ترتاح لمدة ١٠ دقائق على صينية مدهونة بالزيت

Shape the pies in a spiral form as shown in the video.

Bake the pies in a preheated oven at 200°C (392°F) until they turn golden and crispy.
