We place the onion, soy sauce, yogurt, water, and salt in a blender.

We blend the ingredients well until the marinade becomes smooth.

We place the chicken in a plastic bag and pour the marinade over it.

We leave the chicken to marinate for at least 2 hours in the fridge.

We mix the spices: coriander, garlic powder, rosemary, onion powder, allspice, black pepper, cinnamon, cloves, paprika, and salt.

We remove the chicken from the marinade and pat it dry inside and out.

We rub it with a bit of olive oil.

We stuff the chicken with the seasoned onions.

We coat the entire chicken with the spice mix.

We tie the chicken legs with kitchen twine to keep them secure while roasting.

To grill: insert the skewer through the chicken, place it under the oven grill on medium heat for about 1 hour to 1 hour and 15 minutes.

To roast in an oven bag: place onion slices at the bottom of the bag, set the chicken on top, seal the bag well, and bake in a preheated oven at 180°C for 1 hour. Then open the bag and turn on the top grill for 10 minutes until browned.
