Molokhieh
Ingredients
- 3Psc.Frozen Molokhia
- 1Psc.Chicken stock
- 10Psc.Minced garlic cloves
- 1CupOlive oil
- 1PinchSalt
- 1To TasteBlack pepper
- 2Psc.Green chili pepper
- 0.5CupYogurt
- 0.5BunchGreen Coriander
- 1Psc.Lemon juice
Steps

Let the frozen molokhia thaw slowly in chicken stock.

Gradually add more stock to reach your desired consistency.

Once completely melted, let it boil for a few minutes.

Add the minced garlic and let it simmer for a couple of minutes, then turn off the heat.

Do not cover the pot and do not add lemon juice until you serve it.

For the Roasted Chicken: - 3 tbsp olive oil - Juice of 1 lemon - 1/2 cup fresh coriander - 1-2 green chilies (seeds removed) - 4 cloves garlic - 1/2 cup yogurt - Salt and pepper to taste

Combine all the marinade ingredients in a food processor and blend until smooth.

Marinate the chicken overnight or for a few hours.

Preheat the oven to 200°C (400°F).

Place the chicken on a wire rack over a roasting pan, cover, and bake for 30 minutes.

Uncover the chicken and continue baking until fully cooked and the skin is crispy.
