Ingredients
- 500Kilograms (kg)Lamb Liver
- 2Psc.Onion
- 1Psc.Green chili pepper
- 2Psc.Potato
- 1PinchSalt
- 1To TasteBlack pepper
- 1Tablespoons (tbsp)Corn Starch

Cut the liver into small cubes.

Peel the onions and slice them thinly.

Wash the chili pepper and cut it into small slices.

Heat some oil in a frying pan over medium heat, then add the onions and sauté until soft.

Add the chili pepper to the onions and stir for a minute.

Add the liver to the pan and mix well with the onion and pepper.

Season the liver with salt and black pepper, and stir until fully cooked and its color changes (about 10 minutes).

While the liver cooks, peel the potatoes and cut them into thin fries.

Place the potatoes in a bowl, sprinkle with a little starch and mix well.

Deep-fry the potatoes until golden and crispy, then remove and drain on a strainer or paper towel.

Spread the hummus on a serving plate, then garnish with a sprinkle of sumac and a drizzle of olive oil.
