  • 1CupCooked chickpeas

  • 1Psc.Lemon juice
  • 0.5ClovesMinced garlic
  • 2CupOlive oil
  • 1PinchSalt
  • 1BunchParsley
  • 1CupRoasted pine nuts
  • 3Psc.Eggplant

Steps

    Cut the eggplant into small cubes, sprinkle with salt, add the flour and stir well

    Heat the oil in a skillet over medium heat, then fry the eggplant cubes until golden, then drain off the excess oil.

    We cut the bread into small cubes, put oil on them and toast them in the air fryer.

    In a bowl, mix the yogurt, tahini, lemon juice, crushed garlic and salt until you get a homogeneous consistency.

    In a serving dish, place a layer of toasted bread, then spread the fried eggplant and boiled chickpeas on top, then place another layer of fried eggplant

    Pour the yogurt mixture over the ingredients, then garnish with chopped parsley and fried pine nuts.
