Filling Preparation We take a quarter cup of carob or date paste. We add date syrup. We add ginger, cardamom, cinnamon, and black lemon to taste.

We mix the dry ingredients (flour and salt).

We add olive oil and ghee and mix well.

We add water and natural yeast and knead until we get a soft dough.

We cover the dough and let it rest for one hour.

We divide the dough and shape it into balls, then we hollow them out and brush the bottom with olive oil and add the filling.

We seal them well and shape them into a circle.

We cover them and let them proof for one hour.

We preheat the oven to the highest temperature while heating a tray or stone.

We brush the tops with egg and a pinch of salt.

We lower the temperature to 200 degrees and transfer the Keleja to the hot tray, baking for 15 minutes.
