Ingredients
- 2.25CupFlour
- 0.5CupCoconut
- 1Tablespoons (tbsp)Baking powder
- 3Psc.eggs
- 0.75CupOil
- 1Cuporange juice
- 1PinchSalt
- 1.5CupSugar
- 1Tablespoons (tbsp)Orange Zest
- 1Teaspoons (tsp)Vanilla

In a bowl, mix the flour, shredded coconut, baking powder, and salt.

In another bowl, beat the eggs with sugar and vanilla until creamy.

Add half of the dry mixture (flour, coconut, and baking powder) to the egg mixture and mix well.

Add the oil, then the orange juice, and continue mixing.

Add the remaining dry mixture and mix until the ingredients are well combined

Add the orange zest and mix gently.

Pour the batter into a greased and floured (or parchment-lined) baking pan.

Bake in a preheated oven at 180°C (350°F) for 40 minutes, or until a toothpick inserted into the center comes out clean.

For Decoration: Mix the juice of one orange with powdered sugar and drizzle it over the cake after baking. Sprinkle shredded coconut on top for garnish.
