To prepare the kibbeh dough, soak the bulgur in water for 10 minutes, then drain it well. After that, place the raw minced meat with the bulgur, onion, and spices in a food processor, and blend the ingredients well until you achieve a cohesive dough. If the dough is too soft, add a little dry bulgur to firm it up.

To prepare the filling, we start by adding the coarse minced meat to a pan over medium heat and stir it until all the water evaporates. Then, we add olive oil and chopped onion, and sauté the ingredients until the onion becomes translucent. Next, we add salt and spices, turn off the heat, and then add the roasted almonds or pine nuts and pomegranate molasses, stirring the filling well until it is well combined.

We place the dough in the cupcake molds and shape it as shown in the video, then add the filling on top of the dough. After that, we put them in the oven for no less than half an hour until they are cooked and golden brown.
