Ingredients

- 0.5CupFine semolina
- 2CupSugar
- 2Tablespoons (tbsp)Starch
- 1Tablespoons (tbsp)Mahleb
- 1Tablespoons (tbsp)Baking powder
- 0.5Teaspoons (tsp)Baking soda
- 2.75CupWarm water
- 2Teaspoons (tsp)Rose water

Place all the dry ingredients in a large bowl: flour, semolina, sugar, cornstarch, mahlab, baking powder, and baking soda.

Add the warm water and rose water to the dry ingredients.

Blend the mixture in an electric blender on high speed for 5 minutes until you get a smooth, liquid batter.

Let the batter rest for 5 to 7 minutes only—do not exceed this time.

Heat a non-stick pan over high heat, then reduce to medium before pouring the batter.

Pour the batter into small circles of desired size and let them cook until bubbles form on the surface and the top dries without flipping.

Remove the qatayef from the pan and place them on a clean cloth, covering them to keep them soft.

Fill the qatayef with your preferred filling, then either fry or bake them as desired
