  • 1Tablespoons (tbsp)Tahini
  • 1Tablespoons (tbsp)Sumac

Steps

    Cut the eggplant in half

    Place the eggplant slices, red pepper, and garlic head in a baking sheet

    Sprinkle with olive oil, salt, black pepper, and thyme.

    Place the tray in the oven at the highest temperature for half an hour until the ingredients are cooked.

    After removing from the oven, scoop out the eggplant flesh as shown in the video and place it in a food processor.

    Add the garlic and roasted red pepper to the food processor.

    Add the tahini, lemon juice, sumac, and 1 tablespoon of thyme to the mixture.

    Add any remaining liquids from the grilling process to the mixture to increase flavor and texture.

    Mix the ingredients well until the texture is smooth and homogeneous and then serve.
