Onion

Prepare the onion by slicing it into thin wedges.

نجهّز البصل بتقطيعه إلى جوانح رفيعة.

نسخّن الزيت الغزير في قدر.

نضيف البصل المقطع إلى الزيت الساخن.

Stir the onions continuously until their color starts changing to golden

نقلّب البصل باستمرار حتى يبدأ لونه بالتغير ويصبح ذهبياً.

Once the onions turn golden and are ready, lift them out of the oil using a slotted spoon.

عندما يصبح البصل ذهبياً وجاهزاً، نرفعه من الزيت باستخدام ملعقة ذات ثقوب.

Place the fried onions on a tray lined with paper towels.

نضع البصل المقلي على صينية مبطنة بورق ماص للزيت.

Let the onions cool completely on the tray until they become crispy

نترك البصل ليبرد تماماً على الصينية حتى يصبح مقرمشاً.

Once cooled and crispy, store the onions in an airtight container.

بعد أن يبرد البصل ويصبح مقرمشاً، نضعه في علبة محكمة الإغلاق.

البصل المقلي المقرمش

ثومية على الطريقة الاصليه، لا نشاء ولا بطاطا ولا بيض، نستخدم 100 ل 150 غرام من الزيت النباتي

We start by blending the garlic with salt in a blender until smooth.

نبدأ بفرم الثوم مع الملح في الخلاط حتى نحصل على قوام ناعم.

We gradually add the vegetable oil while continuing to blend until the mixture is well combined.

نضيف الزيت النباتي تدريجياً مع الاستمرار في الخلط ليتجانس المزيج.

Add lemon juice and white vinegar to the mixture to give it a white color, then continue mixing while gradually adding the oil.

نضيف عصير الليمون الحامض ونضيف الخل الأبيض للمزيج لإعطاء لون أبيض، ونكمل الخلط مع إضافة الزيت تدريجياً.	.

We add lemon juice, vinegar, and ice together and blend until fully incorporated.

نضيف عصير الليمون والخل والثلج معاً ونخلط حتى يمتزج تماماً.

We keep adding oil gradually while continuously blending until we get a smooth, creamy texture.

نستمر في إضافة الزيت تدريجياً مع الخلط المستمر حتى نحصل على قوام كريمي ناعم.

نضيف الملح الخشن إلى الفلفل المقطع.

Blend the peppers in a food processor until smooth.

نفرم الفلفل في محضر الطعام حتى يتجانس.

Add garlic to the pepper mixture and mix well.

نضيف الثوم إلى الخليط المفروم ونخلطه جيداً.

Strain the mixture in a colander to remove excess liquid.

نصفي الخليط في مصفاة لإزالة السوائل الزائدة.

Add the ground spices to the strained pepper mix and stir well.

نضيف خليط البهارات المطحونة إلى الفلفل المصفى ونخلط جيداً.

Place the mixture in a glass jar and press firmly by hand.

نضع الخليط في برطمان زجاجي ونضغطه باليد حتى يتماسك.

Pour the reserved pepper liquid over the mixture in the jar.

نصب السوائل المصفاة من الفلفل فوق الخليط في البرطمان.

Cover the surface of the mixture with clean cabbage leaves.

نغطي سطح الخليط بأوراق ملفوف نظيفة.

Place a water-filled plastic bag on top to press down the mixture.

نضع كيساً بلاستيكياً مملوءاً بالماء فوق الخليط للضغط على المكونات.

Seal the jar tightly but without over-tightening to prevent explosion during ferment.

نغطي البرطمان بإحكام لكن دون ضغط قوي لتجنب الانفجار أثناء التخمير.

Chicken stock

Melt the butter in a large saucepan over low heat, then add the onion and cook for 3-4 minutes until softened but not browned. In another saucepan, heat the chicken stock to a gentle simmer.

نذيب الزبدة في قدر كبير على نار هادئة، ثم نضيف البصل ونطهوه لمدة 3-4 دقائق حتى يلين دون أن يتغير لونه. في قدر آخر، نسخن مرق الدجاج حتى يصل لمرحلة الغليان الخفيف.

Add the rice to the onion and stir for 1 minute until coated in butter. Add several ladles of hot stock, stirring continuously so the rice cooks evenly. Keep adding stock gradually, stirring for about 20 minutes until the rice is creamy on the outside but still al dente.

نضيف الأرز إلى البصل ونقلب لمدة دقيقة حتى يتغلف بالزبدة. نضيف عدة مغارف من المرق الساخن مع التحريك المستمر حتى ينضج الأرز بالتساوي. نستمر في إضافة المرق تدريجياً مع التحريك لمدة 20 دقيقة تقريباً أو حتى يصبح الأرز كريمي الملمس من الخارج وطرياً من الداخل.

Remove the saucepan from the heat and allow the rice to cool completely.

نرفع القدر عن النار وندع الأرز يبرد تماماً.

Stir in the grated parmesan and beaten eggs. Season with salt and pepper.

نضيف الجبن البارميزان والبيض المخفوق، ونتبل بالملح والفلفل.

Form the rice into balls, and place a piece of mozzarella cheese and basil inside each ball.

نشكّل الأرز على هيئة كرات، ونضع داخل كل كرة قطعة من جبن الموزاريلا و الريحان.

Coat the balls with breadcrumbs, then freeze for 2 hours.

نغطي الكرات بفتات الخبز، ثم نضعها في الفريزر لمدة ساعتين.

Deep-fry the balls in hot oil at 180°C until golden brown.

نقلي الكرات في زيت ساخن بدرجة حرارة 180 مئوية حتى تكتسب لوناً ذهبياً جميلاً.

We wash the bulgur thoroughly with water.

نغسل البرغل جيدًا بالماء.

We spread the bulgur on a tray and let it dry under the sun.

نفرش البرغل على صينية ونتركه ليجف تحت الشمس.

We add the milk to the bulgur. We let it soak for 4 hours until it absorbs the milk

نضيف الحليب إلى البرغل. نتركه منقوعًا 4 ساعات حتى يشرب الحليب.

After 4 hours, we add the yogurt and mix well.

بعد 4 ساعات نضيف الروب ونخلط جيدًا.

. The next day, we knead the bulgur and yogurt by hand or machine.

في اليوم التالي، ندعك البرغل والروب يدويًا أو بماكينة.

We add half of the labneh and blend with an electric blender.

نضع نصف كمية اللبنة ونخلط بالخلاط الكهربائي.

We cover the pot and leave for another 12 hours.

نغطي الفخارة ونتركها 12 ساعة أخرى.

We add the remaining labneh with salt and mix well.

نضيف بقية اللبنة مع الملح ونخلط جيدًا.

We cover and leave it for 4 more days, stirring twice daily.

نغطي الخليط ونتركه 4 أيام، نحركه صباحًا ومساءً.

في اليوم السابع تصبح الكشكة جاهزة.

We store it in glass jars covered with olive oil.

نخزنها في مراطبين زجاج مغطاة بزيت الزيتون.

Soak the chickpeas in cold water for 12 hours.

ننقع الحمص في ماء بارد لمدة 12 ساعة كاملة.

نضيف كربونات الصوديوم ونفرك الحمص جيداً.

Cover with cold water and bring to a boil.

نغمر الحمص بالماء البارد ونرفعه على النار حتى يغلي.

نترك الحمص على نار هادئة حتى ينضج تماماً.

Blend the cooled chickpeas with tahini, salt, and lemon juice.

نخلط الحمص البارد مع الطحينة والملح وعصير الليمون.

نضيف الماء المثلج مع قطع الثلج تدريجياً.

نخلط المكونات بالخلاط حتى نحصل على قوام كريمي ناعم.

Lentils

ننقي العدس من الشوائب ثم نغسله جيدًا.

Place the rice in a pot with boiling water, then add the lentils.

نضع الأرز في وعاء على النار، وعندما يغلي الماء نضيف العدس.

Boil the lentils until three-quarters cooked, uncovered

نسلق العدس حتى ثلاثة أرباع الاستواء بدون تغطية.

In a skillet, sauté onions in olive oil with a little vegetable oil until golden.

في مقلاة، نقلي البصل بزيت الزيتون والقليل من الزيت النباتي حتى يذبل ويصبح ذهبيًا.

Add the washed rice to the fried onions and stir briefly.

نضيف الأرز المغسول إلى البصل المقلي ونقلب قليلًا.

Season with salt and cumin, then mix well.

نضيف الملح والكمون ونقلب جيدًا.

Once the lentils are nearly cooked, add the rice-onion mixture to the pot.

عندما يصبح العدس شبه مستوٍ، نضيف مزيج الأرز والبصل فوقه في الوعاء.

نغمر المكونات بالماء الساخن حتى يغطيها.

Bring to a boil, then reduce heat and cover for 10-15 minutes.

نترك المزيج يغلي، ثم نخفض الحرارة ونغطيه 10-15 دقيقة.

After turning off the heat, cover the pot with a towel and lid, and let rest 10-15 minutes.

بعد إطفاء النار، نغطي الوعاء بمنشفة ثم بالغطاء ونتركه 10-15 دقيقة.

نضيف القليل من زيت الزيتون فوق المجدّرة ونقلب بلطف.

نضع الخبز، الحليب، الحليب المكثف، البيض، والفانيلا في الخلاط.

نخلط المكونات حتى تتجانس.

نحضر قالب الكيك ونسكب فيه الكراميل المغلي.

نصب خليط الخبز فوق الكراميل.

Place the mold in a pot with water (water bath).

نضع القالب داخل طنجرة بها ماء (حمام مائي).

Cover the pot and bake in a preheated oven at 140°C.

نغطي الطنجرة ونخبزها في فرن مسخن مسبقاً على حرارة 140°م.

Clean the dried anchovies by removing heads and guts, then rinse well.

ننظف العومة المجففة بإزالة الرأس والبطن ثم نغسلها جيدًا.

Heat oil or ghee in a pan, add anchovies, and fry for about 10 minutes until dry.

نضع الزيت أو السمن في المقلاة ثم نضيف العومة ونقليها حوالي 10 دقائق حتى تنشف.

Add crushed chili and curry leaves, then stir.

نضيف الفلفل الحار المجروش وورق الكاري ونقلب.

Add onions, stir, cover, and cook until onions caramelize, stirring occasionally.

نضيف البصل ونقلب المكونات، ثم نغطي المقلاة ونتركها حتى يتكرمل البصل مع التقليب من حين لآخر.

Prepare the caramel by melting the sugar in a pan without water until golden.

نصنع الكراميل بإذابة 0.75 كوب سكر في مقلاة دون ماء حتى يذوب ويأخذ لوناً ذهبياً.

Pour the caramel into a baking dish and let it set.

نصب الكراميل في صينية الخبز ونتركه ليجمد.

In a bowl, cream the butter and sugar, then add the egg and mix well.

في وعاء، نخلط الزبدة مع 150 جرام سكر جيداً ثم نضيف البيض ونخفق حتى يتجانس.

Gradually add flour, mint, salt, milk, and vanilla, mixing until smooth.

نضيف الطحين مع النعناع والملح تدريجياً مع الحليب والفانيلا ونخفق حتى نحصل على خليط متماسك.

Pour the cake batter over the caramel and level the surface.

نصب خليط الكيك فوق الكراميل في الصينية ونسوي السطح.

For the cream layer: whisk together milk, condensed milk, eggs, and vanilla until smooth.

لتحضير طبقة الكريمة: نخلط 370 مل من الحليب، الحليب المكثف،  5 بيضات، والفانيلا حتى يصبح المزيج ناعماً.

Pour the cream mixture over the cake batter in the dish.

نصب خليط الكريمة فوق خليط الكيك في الصينية.

Place the dish in a hot water bath and bake in a preheated oven at 150°C for about 45 minutes.

نضع الصينية في حمام مائي (صينية أكبر بها ماء ساخن) ثم ندخلها فرن محمى مسبقاً على 150°م لمدة 45 دقيقة تقريباً.

Once baked, refrigerate overnight to set completely.

بعد الخبز، نضع الكيك في البراد طوال الليل حتى يبرد تماماً.
