  • 1Teaspoons (tsp)Sea Salt

  • 1Teaspoons (tsp)Coriander
  • 1Teaspoons (tsp)Cumin
  • 4ClovesGarlic
  • 1CupOlive oil

Steps

    Add coarse salt to the chopped peppers.

    Blend the peppers in a food processor until smooth.

    Add garlic to the pepper mixture and mix well.

    Strain the mixture in a colander to remove excess liquid.

    Add the ground spices to the strained pepper mix and stir well.

    Place the mixture in a glass jar and press firmly by hand.

    Pour the reserved pepper liquid over the mixture in the jar.

    Cover the surface of the mixture with clean cabbage leaves.

    Place a water-filled plastic bag on top to press down the mixture.

    Seal the jar tightly but without over-tightening to prevent explosion during ferment.
