Zucchini With Minced Meat

We cut the zucchini lengthwise and scoop out the core using a spoon.

We chop the red and yellow peppers into small cubes and set them aside.

We finely chop the onion.

In a pan over medium heat, we cook the minced meat

Add salt and black pepper to the minced meat and stir well until it changes color.

Add the chopped onion to the meat and continue to stir

We add the scooped zucchini and chopped peppers to the mixture and stir.

Add the tomato sauce, salt, pepper and paprika, mix well and allow it to thicken.

We arrange the zucchini halves and pepper pieces in a baking dish.

We fill the zucchini and pepper shells with the meat mixture.

Add a cup of tomato juice seasoned with salt and black pepper over the filling.

(Optional) We place cherry tomatoes and sprinkle mozzarella cheese on top of the filling.
