To prepare the dressing: Blend the avocado, coriander, lime juice, garlic, jalapeño, sour cream, mayonnaise, and olive oil in a blender until smooth. Add salt and pepper to taste.

In a large bowl, layer the salad ingredients: lettuce or mixed greens, red beans, corn, cherry tomatoes, red cabbage, red onions, and jalapeños.

We add the taco-seasoned minced meat on top of the salad.

Garnish with green onions and coriander.

Sprinkle crushed tortilla chips over the top, then drizzle the avocado dressing on the salad.
