    Preheat the oven to 180°C and prepare your muffin tray.

    In a medium-sized bowl, mix the flour, baking powder, baking soda, salt, and cheeses. Mix well and set aside.

    In a separate bowl, mix the olive oil, yogurt, milk, honey, and chopped spinach (and herbs, if using)

    Add the wet mixture to the dry ingredients and fold gently.

    Divide the batter into the muffin pan and bake for 20-25 minutes until golden.

    Serve with a side of labneh, mint tea, and fresh salad.
