    We start by washing the fish well under running water, then we set it aside to dry.

    We use a mortar to grind the lomi with garlic and onion until we get a smooth mixture.

    We add salt and lemon juice to the mixture and mix them well. Then we season the fish with the mixture, making sure to distribute the marinade inside and outside the fish.

    We add the lemon zest and then grill the fish over the fire or in the oven, leaving it for half an hour until it cooks and turns golden.

    We serve the fish with slices of green lemon and a drizzle of pomegranate molasses on top.
