Steps

    Wash the arugula well, drain it, and place it in a serving bowl.

    Cut the tomato into medium cubes and add it to the arugula.

    Slice or dice the cucumber as desired and add it to the mixture.

    Slice the small onion into thin wings, separate them, and add to the salad.

    Prepare the dressing by mixing olive oil, vinegar, pomegranate molasses, crushed garlic, salt, dried mint, sumac, wild thyme, and lemon juice in a small bowl.

    Add half of the dressing to the salad and gently toss to combine the flavors.

    Add the chopped olives and pieces of local cheese on top.

    Sprinkle pomegranate seeds over the salad.

    Pour the remaining dressing on top.
