Steps

    Soak the yellow lentils in water overnight.

    We cut all the vegetables into suitable pieces as shown in the video

    In a pot, add the soaked lentils to boiling water along with tomatoes, carrots, garlic, and onion.

    Let the ingredients boil while skimming off any foam that forms on the surface.

    Season with salt, cumin, vegetable stock cubes, and black pepper, then let it simmer until everything is fully cooked.

    Blend the soup using a hand blender or a regular blender until smooth.

    In a frying pan, sauté the chopped onion in a little oil until golden brown.

    Add the fried onion to the soup and mix well.

    Stir in the toasted vermicelli, turn off the heat, and let it sit for 10 minutes to allow the vermicelli to absorb the flavors.
