We place the minced beef in a bowl and mix it with the chopped onion, salt, and spices until well combined.

We peel the eggplants and cut them into lengthwise slices, leaving some parts unpeeled as is usually shown in preparation.

We stuff the eggplant slices with the meat mixture and arrange them in a baking tray.

We add tomato pieces between the eggplant slices in the tray.

We prepare the sauce by mixing tomato paste with ketchup, pomegranate molasses, salt, oil, and water until smooth.

We pour the sauce over the eggplants in the tray.

We place the tray in a preheated oven at 200°C (392°F).

We leave the tray in the oven for 45 minutes to 1 hour until the eggplants and meat are cooked and the surface is browned.

We remove the tray from the oven and let it cool slightly.
