Ingredients

  • 0.25Teaspoons (tsp)Citric acid

  • 1Tablespoons (tbsp)Corn Starch
  • 400Tablespoons (tbsp)Pistachio
  • 1Teaspoons (tsp)Ghee
  • 1Teaspoons (tsp)Mastic

Steps

    In a skillet over medium heat, add ghee.

    Add the pistachios and stir until toasted and lightly golden in color.

    Remove the pistachios from the heat and set aside to cool.

    In a saucepan, mix 2 cups of sugar with 1.5 cups of water.

    Add the lemon salt, stir the mixture and leave it on medium heat

    In a separate bowl, dissolve 1 cup of cornstarch in 1 cup of cold water, stirring constantly to avoid lumps

    Gradually add the dissolved starch mixture to the sugar mixture, stirring continuously with a wooden spoon or hand whisk.

    Once the consistency thickens, gradually add a cup of sugar

    We stir the starch mixture from 50 minutes to an hour, and a test can be made to get the right consistency by putting a spoonful of the mixture in lukewarm water and leave it for 3 minutes and then test it, if it is rubbery, it is ready, but if it is not, it means it needs more time on the fire.

    Stir well and before the last stage, grind a little mastic with a teaspoon of sugar and add it to the starch mixture.

    Add a tablespoon of rose water and test to see if the consistency is right.

    When you reach the consistency shown in the video, turn off the heat and then Add the roasted pistachios to the mixture and stir well to ensure the pistachios are evenly distributed.

    Place a bag on a flat surface, grease it with oil and then spread the mixture Shape it and seal it as shown in the video.

    Leave the pistachio rolls in a tray for 3 or 4 hours to cool
