Steps

    We prepare the boiled potatoes after peeling and cooking them well.

    We add a pinch of salt to the potatoes.

    We add 1 teaspoon (5g) of starch to improve the dough's texture.

    We knead the ingredients well until we get a smooth, cohesive dough.

    We spread the dough out on parchment paper inside a baking tray in a rectangular shape.

    We spread the natural cheese evenly on top of the dough.

    We optionally add olives, if desired.

    We start rolling the dough into a log shape, as shown in the video or pictures.

    We brush the top with egg yolk if we want a golden crust.

    We sprinkle nigella seeds on top for garnish.

    We place the tray in a preheated oven at 180°C (356°F) for 30 minutes until golden and fully baked.
