    Cut the eggplant and potatoes into medium-sized cubes.

    Chop the tomatoes, bell pepper, and onion into small pieces.

    Fry the eggplant and potato cubes in oil until they turn golden.

    Place the fried potatoes and eggplant in a baking dish.

    Add the chopped tomatoes, bell pepper, and onion on top.

    Juice half a kilo of tomatoes in a food processor

    Prepare the sauce by blending half a kilogram of fresh tomatoes with tomato paste and pepper paste, then add black pepper, dried coriander, and salt, and mix well.
