Wash the strawberries thoroughly, remove the green stems, and cut them into large pieces.

Place the chopped strawberries in a large pot.

Add the sugar to the strawberries and mix well.

Let the mixture sit for two hours to allow the strawberries to release their juices.

Check the amount of liquid that has been released from the strawberries.

Add the vanilla extract and stir well.

Place the pot over medium heat and bring it to a boil

Stir continuously with a wooden spoon to prevent the mixture from caramelizing.

Remove any foam that forms on the surface of the jam.

Reduce the heat to low to prevent the jam from burning.

Gently press down the floating strawberries to keep them submerged in the liquid.

Squeeze the lemon juice over the jam and stir well.
