Steps

We wash the lentils well and then boil them for a quarter of an hour after boiling.

We slice two onions and fry them in a generous amount of olive oil until they turn golden

We place the fried onions in a strainer to drain the oil, then finely chop one onion.

We return the chopped onion to the same oil and add salt.

We add two cups of washed coarse bulgur and cumin, then add the boiled lentils.

We add some of the lentil water, cover the pot, and let it cook on low heat for 15 to 20 minutes, then serve the mujadara topped with the fried onions.

Prepare the Salad: We chop the tomatoes and onion into cubes, then add the chopped mint, salt, chili pepper (if desired), and sumac, and mix all the ingredients with olive oil and lemon juice.
