Wash the green olives thoroughly.

Make small incisions in each olive using a mortar and pestle.

Soak the olives in cold water for 2 hours to preserve their green color.

Slice the red and green chili peppers, and both yellow and green lemons.

After soaking, drain the olives and add olive oil, lemons, and chilies.

Mix the ingredients well.

Prepare the brine: add 2.5 tablespoons of coarse salt to 1 liter of water and dissolve it.

Place the olives in sterilized jars.

Pour the brine into the jars.

Leave the jars for 5 minutes.
