    For date filling Remove the pits from the dates and then mash them

    Mix the mashed dates with fennel, aniseed, and cinnamon until the ingredients are homogeneous and form a cohesive paste.

    Pistachio filling: Grind the pistachios until finely ground, then mix them with the caster sugar. Gradually add the blossom water until it reaches a smooth consistency

    Walnut filling: Grind the walnuts into small pieces, then mix them with 1/4 cup of caster sugar and 1 tablespoon of cinnamon. Gradually add a little water until the filling comes together.
