Ingredients

  • 3CupOat
  • 1.25Tablespoons (tbsp)Coconut flakes
  • 1CupNuts
  • 0.5CupPumpkin seeds
  • 0.5CupSunflower seeds
  • 0.5PinchSalt
  • 0.5Teaspoons (tsp)Vanilla
  • 0.5CupOlive oil
  • 0.5CupPistachio Butter
  • 0.5CupMaple syrup

Steps

  1. 1

In a bowl, mix the dry ingredients together and set aside. In a small saucepan over medium heat, combine olive oil, peanut butter (or almond butter), and honey (or maple syrup) until fully melted and combined.

  2. 2

Combine the dry ingredients with the melted oil and butter mixture until well combined. Spread the mixture evenly onto two baking trays (30x40 cm) to ensure it roasts evenly.

  3. 3

Bake in the oven at 160°C (320°F) for about 30 minutes, and flip halfway through if you don’t have a fan in the oven.

  4. 4

Watch carefully as it can burn quickly. It may take less or more time depending on your oven. After baking, let it cool completely before transferring it to an airtight container.

  5. 5

Add chocolate chunks or dried fruits after the granola cools down to avoid burning them in the oven.
