Ingredients

- 1Grams (g) Instant yeast
- 0.75CupOlive oil
- 1PinchSalt
- 700CupWarm water
- 300Grams (g) Thyme leaves
- 2Tablespoons (tbsp)Sumac
- 1CupNabulsi cheese

Steps

We place a portion of the filling over each dough circle and press it slightly so it sticks to the dough.

We start baking them on the lower rack, then move them under the broiler to get a golden top.

We bake them in a preheated oven at the highest temperature

We roll them out slightly again if needed.

We place the flatbreads on a greased baking tray or lined with parchment paper.

Let the dough rest for 15 minutes

Repeat the process of folding the dough as shown in the video

Roll out another ball of dough and then add the filling with Nabulsi cheese

We remove the salt from Nabulsi cheese by soaking it in water

Fold the ends of the dough again to close it as shown in the video

Fold the edges of the dough as shown in the video and then add another layer of filling

We chop the fresh green zaatar roughly

We start rolling out each dough ball into a round shape.

We prepare the filling by mixing the zaatar, diced onions, olive oil, sumac, and salt

Cut the onion into small cubes and then put it in olive oil in a skillet on the fire until it wilts

Cover the balls and let them rest for 20 minutes

We divide the dough into balls of the desired size.

We cover the dough and leave it to rise in a warm place for about one hour or until it doubles in size.

Add ½ cup of olive oil and continue kneading until a soft and firm dough is formed (no more than 10 minutes).
