- 1BunchBasil
- 50Grams (g) Parmesan cheese

In a skillet, add the extra virgin olive oil and let it heat up.

Add the grated potatoes and chopped onion (if using), and sprinkle with salt, black pepper, and paprika.

Spread the mixture evenly in the skillet and cover it.

Stir occasionally until the potatoes are nicely browned.

Once the potatoes are golden, create a well in the center and add a little oil (optional).

Crack the eggs into the well and add fresh basil and cheese on top.

Cover the skillet for a few minutes until the eggs are cooked to your liking

Shishbarak
