Fluffy Pancakes
Ingredients
- 2Tablespoons (tbsp)All-purpose flour
- 4Tablespoons (tbsp)Corn Starch
- 3Tablespoons (tbsp)Baking powder
- 0.5Teaspoons (tsp)Baking soda
- 3CupSugar
- 0.25PinchSalt
- 3Psc.eggs
- 1Teaspoons (tsp)Vanilla
- 1.5Grams (g) Greek yogurt
- 45Milliliters (mL)Melted butter
- 0.25CupWarm milk

Mix all the dry ingredients in a large bowl: flour, cornstarch, baking powder, baking soda, sugar, and salt.

In another bowl, whisk the Greek yogurt with the eggs and vanilla until smooth.

Add the yogurt mixture to the dry ingredients and fold gently. At this stage, the batter will be thick, which is normal.

Add the melted butter and ¼ cup warm milk, folding gently until the batter is combined. If the batter is too thick, add a little milk gradually (1–2 tablespoons at a time) until the desired consistency is reached.

Heat a non-stick pan over medium heat, then reduce the heat.

Pour a portion of the batter into the pan, cover with a lid, and cook for 2–3 minutes until the bottom turns golden.

Flip the pancake, cover again, and cook for 1.5–2 minutes until fully cooked.

Remove the pancake from the pan and repeat the process with the remaining batter.

Serve the pancakes warm with maple syrup or honey and fruits as desired.
