Steps

    Wash the red peppers thoroughly and cut them in half, removing the seeds

    Arrange the peppers on an oven rack and roast at 90°C (194°F) for 1.5-2 hours until wilted.

    In a food processor, blend the roasted peppers with salt and vinegar until smooth.

    Add the chili pepper or chili powder (optional) and mix well.

    Transfer the paste to a sterilized jar, then pour olive oil over the surface to seal it.
