  • 1CupFull cream milk
  • 3Psc.Lemon juice
  • 1PinchSalt

    Heat the milk until it reaches a temperature of 35°C, or like the warmth of a teardrop.

    Lower the heat completely, add 1 tablespoon of lemon juice

    Stir for 2 minutes until the cheese curds form

    Add the remaining lemon juice, turn off the heat, and leave it for 5 minutes to let the milk separate.

    Strain the mixture through a sieve lined with a piece of cloth or cheesecloth, and let it rest for 10 minutes.

    Then, blend the cheese in a blender with a pinch of salt.

    If the texture is too thick, you can add some of the strained liquid until the desired consistency is achieved.

    You can add any flavorings you like at this stage.

    Store the cheese in the refrigerator for up to a week in an airtight jar
