Bombay eggs
Ingredients
- 1PinchCumin seeds
- 1CupCoriander seeds
- 2CupOil
- 1Psc.Chopped Onion
- 2ClovesMinced garlic
- 1Psc.Red chili pepper
- 1Kilograms (kg)Sweet potato
- 0.5Teaspoons (tsp)Curry powder
- 0.5Teaspoons (tsp)Turmeric powder
- 200Grams (g) Indian masala sausages
- 1Psc.Tomato
- 1Tablespoons (tbsp)Tomato paste
- 1Liters (L)Tomato juice
- 3Psc.eggs
- 1PinchMinced Green onions
- 1PinchMinced Coriander

Cut the potatoes, tomatoes, chili peppers and sausage into small pieces or to taste

Toast the cumin and coriander seeds in a pan for 2 minutes, then grind them.

Heat the oil in a pan over medium heat, then add the chopped onion and spices, stirring well.

Add the minced garlic and chopped chili, stirring until fragrant.

Add the diced sweet potato and mix well, then stir in the curry powder and turmeric.

Add the chopped Indian sausage and stir, then add a little water and cover the pot until the ingredients are cooked

Add the diced tomatoes, tomato paste, tomato juice, salt and black pepper, stir and let the mixture thicken for 5 minutes.

Crack the eggs over the mixture and let them cook to your preferred doneness.

Garnish with fresh coriander and green onions.
