Ingredients

  • 3Psc.eggs
  • 1CupSugar
  • 2CupFlour
  • 1Tablespoons (tbsp)Baking powder
  • 1PinchSalt
  • 1Teaspoons (tsp)Vanilla
  • 1CupBlueberry
  • 1CupWhite chocolate chips
  • 1Grams (g) Sour cream
  • 1CupLiquid Whipping Cream
  • 1CupPowdered sugar

Steps

    Preheat the oven to 170°C (340°F), with heat from top and bottom and fan on if available.

    In a bowl, whisk the eggs with the sugar until light and fluffy.

    Add the sour cream and sweet cream, and whisk for another minute until smooth.

    Add the flour, baking powder, salt, and vanilla, and gently fold until well combined.

    Pour the batter into a greased cake pan or one lined with baking paper.

    Evenly sprinkle the blueberries and white chocolate pieces on top of the batter.

    Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

    Once the cake has cooled, dust with powdered sugar and slice to serve.
