    We place equal amounts of black pepper, allspice, cumin, and dried coriander in a pan.

    We stir the spices over medium heat until they begin to release their aroma, then remove them from the heat.

    In a spice grinder, we add an amount of crushed carob that is double the amount of the toasted spices.

    We add the toasted spices to the grinder.

    We add the bay leaves and grind everything well until smooth.

    We add the thyme and garlic powder to the mix.

    We grind everything again until we get a fine, well-blended mixture.
