  • 1SlicesLettuce
  • 2Psc.Cucumber

  • 2Psc.Avocado
  • 1CupMinced mint
  • 2Tablespoons (tbsp)Seedless black olives
  • 1Psc.Tomato
  • 0.5PacketPomegranate
  • 0.5Psc.lemon
  • 5CupOlive oil
  • 1PinchSalt

Steps

    Toast the quinoa in a pot over medium heat for about 2 minutes until fragrant.

    Add water to the quinoa, bring to a boil, then lower the heat and let it cook until tender and the water is fully absorbed

    Allow the quinoa to cool

    Chop the lettuce, cucumber, and green onions, and place them in a large bowl.

    Cut the avocado and tomatoes into suitable pieces

    Add the diced avocado to the bowl.

    Add chopped fresh mint and black olives.

    Add the diced tomatoes.

    Add the cooled, cooked quinoa to the salad mixture.

    Sprinkle the pomegranate seeds on top.

    Drizzle olive oil, sprinkle salt, and add lemon juice.
