- 500Cupwater
- 6Tablespoons (tbsp)Starch
- 0.25Teaspoons (tsp)Citric acid
- 1Teaspoons (tsp)Rose water
- 1Tablespoons (tbsp)Red food coloring

Add the water to a pot while cold.

Add 1.75 cups of sugar and stir well until dissolved.

Add the cornstarch and mix thoroughly while the mixture is still cold to avoid clumping.

Turn on the heat to very low and stir constantly until the mixture begins to thicken.

After the first 15 minutes of boiling, add the remaining ½ cup of sugar or the glucose syrup and keep stirring.

In the final 30 minutes, dissolve the citric acid in a little water and add it to the pot, continuing to stir

Add a drop of red food coloring and the rose water, then mix well.

Immediately pour the mixture into a mold greased with oil and dusted with cornstarch.

Spread the mixture evenly by hand (lightly oiled or wet).

Leave it to cool completely until it sets.

Optionally, coat the pieces with powdered sugar.

Cooking time is an hour and a quarter over very low heat and constant stirring
