In a pot, heat olive oil and add the chicken pieces, searing them on both sides.

Add the diced onion.

Add bay leaves, cardamom, salt, and black pepper.

Stir the chicken with the onions and spices, then add enough water to cover the chicken.

Cover the pot and let it simmer on low heat until the chicken is cooked.

In a small cup, mix lemon juice, olive oil, salt, and sumac.

Dice a large onion into small cubes.

In another pot, cook the onion with olive oil and salt over the heat until it softens.

Add sumac, black pepper, and cumin, stirring them together.

Add a cup of chicken broth and let it boil.

Cover the saj bread with the onion mixture and place it in a baking tray.
