Ingredients

- 1Teaspoons (tsp)Whole Black Pepper
- 5Teaspoons (tsp)cardamon
- 6Tablespoons (tbsp)Clove
- 3Psc.Bay Leaf
- 1Psc.Orange
- 1Psc.lemon
- 2CupCold water
- 0.6CupSugar

Bring 1 liter of water to a boil in a pot.

Add the sugar and salt, and stir well until fully dissolved.

Add 1 tablespoon of whole black pepper, a few cardamom pods, and some cloves.

Add bay leaves, and the sliced orange and lemon.

Let the mixture boil, then remove it from the heat once the salt and sugar are dissolved and the flavors have infused.

Transfer the hot mixture to a large bowl or deep container.

Add 2 liters of cold water to cool it down completely.

Stir the brine well to combine.

Soak the poultry in the brine once it has completely cooled.

If the poultry isn't fully submerged, turn it over halfway through the soaking time.

Let the poultry soak for several hours or overnight.

After soaking, remove the poultry from the brine and rinse it well before boiling or cooking as desired.
