Mix the minced meat with the chopped onion, parsley, hot pepper, and a spoon of red pepper or tomato paste.

Season the mixture with salt, black pepper, and paprika, then knead well until combined.

Spread the meat evenly in a baking tray lined with parchment paper, then cut it into even squares.

Place pieces of tomato, pepper, and onions next to it.

Bake in a preheated oven at about 200°C (392°F), with heat from top and bottom, for about 40 minutes on the middle rack.

To prepare the red sauce, heat olive oil in a pan, then add the tomato paste and stir.

Season the sauce with white pepper, garlic powder, paprika, and oregano.

Add water and salt, then simmer over low heat for 5 minutes until the sauce thickens.

To make the yogurt sauce, mix the yogurt with tahini, crushed garlic, salt, and pomegranate molasses. Add a bit of water if the mixture is too thick.

To assemble the sandwich, heat some red sauce in a pan and toast the tortilla bread on both sides.

Spread the tahini-yogurt sauce on the bread, add the cooked kebab pieces, and top with grilled tomato, onion, and bell pepper as desired.

Tips For a nicer presentation, you can shape the kebab before baking. Don’t forget to add salt to the red sauce. You can thin the yogurt sauce with a little water if it’s too thick.
