We start by preparing the vanilla mixture. We place 400 grams of room-temperature butter in the bowl of an electric mixer and beat until creamy.

We add 160 grams of powdered sugar to the butter and beat well until the sugar dissolves and the mixture becomes fluffy.

We add 4 egg yolks and 1 tablespoons of vanilla extract, then continue beating until we get a light and smooth mixture.

We add 160 grams of cornstarch and 400 grams of flour, then mix until a soft and uniform dough forms. We set it aside.

Next, we prepare the chocolate mixture. We place 400 grams of room-temperature butter in another bowl and beat until creamy.

We add 160 grams of powdered sugar and beat until the sugar is fully dissolved.

We add 4 egg yolks and 1 tablespoon of vanilla extract, then continue beating until smooth.

We add 160 grams of cornstarch, 320 grams of flour, and 80 grams of unsweetened cocoa powder, then mix until a soft chocolate dough forms.

We shape both doughs using a cookie press or piping bag onto baking trays lined with parchment paper.

We bake them in a preheated oven at 180°C (356°F) for 12–13 minutes, until the petit fours are baked but still light in color.

We fill the vanilla petit fours with pistachio butter, then dip them in white chocolate and garnish with crushed pistachios.
