Steps

    We cut the chicken as shown in the video, where we remove the backbone, press down on the back of the chicken with our hands, and make incisions in the chicken.

    We prepare a chicken brine solution by placing water in a container, then adding the whole spices: a cinnamon stick, cardamom, black pepper, bay leaves, salt, sugar, and lemon slices. We then place the chicken in the solution and let it sit for three hours.

    To make the marinade, we need tomato sauce, milk or yogurt, and all the mentioned spices. Then we add a peeled and chopped lemon, vegetable oil, vinegar, mustard, and salt, and blend them in the mixer.

    We apply this marinade to the chicken both inside and out, and we let it sit in this marinade for no less than 6 hours.

    The vegetables consist of potatoes, onions, and tomatoes, which we place in a baking tray. We then add the remaining marinade, followed by the chicken. We cover it with parchment paper and then with aluminum foil, and we put it in the oven for an hour and a half.

    After it is cooked, we remove the parchment paper and foil until the chicken is browned. Enjoy your meal!
