In a food processor, blend 1 1/4 cups of sugar with 6 pieces of mastic until smooth.

Begin by heating the milk over medium heat, stirring constantly until it starts to boil.

Add the ground mastic gum with sugar to the milk and continue stirring until it completely dissolves.

Add 1 tablespoon of raw salep and keep stirring until the mixture thickens and becomes smooth.

Add the dessert cream and whisk the mixture until it becomes fully combined.

Pour the mixture into a bowl and let it cool using ice around the bowl, then pour it into a tray with pistachios and cover it with plastic wrap
