- 0.5Psc.Lemon zest

- 1.5Tablespoons (tbsp)Corn Starch
- 1.5CupMilk
- 1CupSugar

Clean the sweet potato using a damp cloth.

Place the sweet potato on parchment paper with aluminum foil underneath to absorb moisture.

Bake in a preheated oven at 220°C until fully cooked.

To prepare the custard: Mix egg yolks, lemon zest, sweetener, cornstarch, and milk well in a cold pan.

Cook over low heat while stirring constantly until the custard thickens.

Transfer the custard to another dish and cover it directly with plastic wrap to prevent a skin from forming.

You can use ready-made custard instead of homemade custard, you can use cornstarch substitute instead of cornstarch, and you can use almond milk instead of regular milk.

Slice the cooked sweet potato and pour the prepared custard over it.

Sprinkle 1 tablespoon of sugar on top and caramelize using a kitchen torch or under the oven broiler to create a caramel crust.
