Steps

    In a large bowl, add 3 cups of soaked and drained Egyptian rice. Then, add half a kilogram of minced meat, 1 teaspoon of black pepper, half a teaspoon of cardamom, 1 teaspoon of seven spices, a pinch of turmeric, and a pinch of nutmeg. Next, add a chicken bouillon cube or 1 tablespoon of salt. Finally, add 3 tablespoons of vegetable oil. Mix the ingredients well until combined.

    Preparing grape leaves and zucchini: **Grape Leaves:** Wash half a kilogram of grape leaves thoroughly with warm water, then drain them. **Zucchini:** Wash 15 small zucchinis, then gently hollow them out using a zucchini corer, making sure not to cut the ends.

    Stuffing grape leaves and zucchini: **Grape Leaves:** Place a grape leaf on a flat surface, shiny side down. Put a teaspoon of filling in the center of the leaf, then roll it up tightly to cover the filling. Repeat the process with the remaining leaves. **Zucchini:** Stuff the zucchinis with the mixture, leaving some space for the rice to expand during cooking.

    Preparing the cooking pot: In the bottom of the pot, place some pieces of meat (optional) along with 4 chopped tomatoes. You can brown the meat beforehand using a little ghee and black pepper. Arrange the zucchinis on top of the meat and tomatoes, then neatly place the stuffed grape leaves over the zucchini.

    Preparation of the broth: In a pot, mix two cups of boiling water with a chicken broth cube, a teaspoon of salt, the juice of two lemons, and two tablespoons of ghee or olive oil.

    Cooking the stuffed vegetables: **Pressure Cooker:** Pour the broth over the stuffed vegetables in the pot, then cover and seal it tightly. Place the pot over medium heat and let it cook for 30 minutes after it starts to whistle. **Regular Pot:** If using a regular pot, pour the broth over the stuffed vegetables and set it over low heat. Let it cook for at least two and a half hours, and it may need more time depending on the type of grape leaves.

    Serving the stuffed vegetables: After cooking, let the pot cool slightly before opening it. Then, serve the stuffed vegetables hot with yogurt or salad, as desired. Enjoy your meal!
