We prepare the marinade by mixing fresh thyme with crushed garlic, cumin, sweet paprika, lemon juice, olive oil, salt, and black pepper until well combined.

We cut the onion into large chunks and spread it in a baking tray along with the potato pieces and chicken thighs.

We pour the marinade over the chicken, potatoes, and onions, making sure everything is well coated, then let it marinate for at least one hour (preferably overnight or from the morning).

We place the tray in a preheated oven at high temperature, uncovered.

After 30 minutes, we remove the tray from the oven and baste the chicken with the juices collected at the bottom.

We repeat the basting again after another 30 minutes.
